2019, Dongpian (Late winter)
Mr. Ye revealed to us a very small quantity of one of his highest-grown, and greenest, teas. The name 冬片 (dōng piàn) describes the harvest. Dongpian tea is picked between late December and early January. If the weather is right, new leaves grow after the normal winter harvest. These young leaves are imparted with special characteristics due to having braved the frosts.
Clean, with a pineapple sweetness , summer squash, and a tartness that is supposedly an effect of the frosts.
Water temperature: boiling
